Chicken breast stuffed with freshly prepared pesto, mozzarella and roasted pepper (Ballotine de poulet farci "à la Caprèse");
Vegetable dish called Tian de Légumes with all the flavors of Provence: tomatoes, zucchini, eggplant, thyme - see photo. (Tian de légumes provençal - voir photo).
Sauce du jour: Sauce Cognac et estragon (learn how to make a pan sauce with Cognac and tarragon).
Dessert: Tarte aux fruits d'éte (Summer fruit tart - learn how to make a pastry cream / apprendre la technique de crème pâtissière).

Tasting Follows Lesson: We’ll go to the table with what we’ve prepared. Dégustation suivant le cours.
